Cauliflower Rice

Since going semi-paleo I’ve had to find other side dishes to go with our meals. One of our staples has been cauliflower “rice”. I was a little skeptical at first but we’ve successfully used this as a rice substitute with chicken curry, shrimp scampi and a roast. It’s pretty easy too!
Cauliflower “Rice”Cut up a head of cauliflower into small florets. Put the florets in a food processor and pulse until the pieces are about the size of rice or couscous.

Dump the cauliflower into a frying pan with a little olive oil, salt and pepper and saute for a few minutes. Lower the heat to the lowest setting and cover the pan to let the cauliflower steam for a few minutes.

That’s it! It’s a fairly quick side dish to throw together and just like rice, it has a pretty neutral flavor so it pairs well with just about anything.

    well THAT is pretty clever! I’ll definitely try this, I haven’t used my food processor in forever
